Quinoa & Mango Salad - gluten/wheat-free

This is a good refreshing salad.  If you can't get
 fresh mango you can try frozen.

1    cup    uncooked Quinoa
2    cups   water
2    cups   cubed peeled mango (not too ripe-needs to be firm)
1/2 cup     sliced and diced green onions or purple (red)
1/4 cup    chopped Cilantro
1/4 cup    extra virgin olive oil - cold or expeller pressed
1/2           lime - juiced (or 1 lime)
1/2 tsp     ground red pepper (spice it up baby)
salt and pepper to taste

place quinoa in a fine-mesh strainer; rinse well.
Transfer to medium saucepan and add water. 
Bring to a boil.  Reduce heat; simmer, covered, 10-12 minutes or until all the water is absorbed.
Stir; let stand, covered, 15 minutes.
Transfer to a large bowl; cover and refrigerate for at least an hour.
Add the mango, cilantro and onions and mix well.
Combine the oil, lime juice and spices; whisk and pour over the quinoa mixture; mix until the whole thing is well blended.
You can eat it now or refrigerate for another hour or so to allow the flavors to marry.

MMMMMMMMMMMM!!!!!  GOOOOOOD......

Note:  Quinoa is an ancient grain used by the Incas.  It contains 8 essential Amino Acids, therefore, it is considered a complete protein.

Interesting, have never tried Quinoa. Have seen it in all the health stores though. One to try, definintely!

I saw Quinoa once in bread (I think) and didn't like the look of it, but after reading how healthy it is... I am going to give it another try. I'm always looking for ways to bring more protein into my diet. Didn't know that quinoa could take care of it!
